Seedy Snack

This is a laissez-faire creation variously classified as snack, dessert, or breakfast; granola or bar. It is gluten-free and can be dairy-free. The following is one idea, but this recipe can be modified infinitely.

2 C oats

1/4 C rice bran

1/2 C quinoa

1/8 C chopped raw almonds

chia seeds

flax seeds

sesame seeds

Heat the oven to broil and toast, checking every minute or so to stir mix.

In a saucepan over low heat, combine:

1/2 C honey

4 T butter (substitute a dairy-free option here if desired)

1 t vanilla

cinnamon

nutmeg

salt

Combine the dry ingredients with the melted mixture. Stir to integrate. Press evenly into a large flat baking tray. Let cool / harden.
