Shrimp with Sauce on Rice

22 Jun

I like buying big bags of frozen shrimp from Trader Joes, or wherever, as they are really easy to cook, and are delicious. Last night I made a simple marinade, and had stir fried shrimp over brown rice, and a tasty salad from my backyard garden.

First, put on a cup of brown rice so it will be ready when you are done with the shrimp and salad.

20-25 frozen shrimp

2 small limes

2 tbsp soy sauce

2 tbsp oyster sauce (or any similar sauce)

3-4 garlic cloves

1 tbsp cooking vinegar

salt, pepper, red chili to taste

a few sprigs of fresh marjoram

Finely chop the garlic and combine it in a bowl with the soy sauce, fish sauce, vinegar, freshly squeezed lime, and spices. Add the thawed shrimp and let marinate for 15-20 minutes. I used the waiting time to make my salad–fresh lettuce, snap peas, carrots, and turnips from my backyard, and a few nasturtiums (they grow everywhere here and taste really good!) also from the yard.

When the salad is done, and the rice almost ready, heat a frying pan and pour in the whole bowl–marinade, shrimp and all. Cook shrimp for about 3 minutes on each side. Then, fill the bowl with rice, pour the stir-fried shrimp over it, and add fresh marjoram.
