Tomato Pepper Gazpacho

Tomatoes and Peppers are so delicious and fresh right now. This is a simple and abundantly flavorful tomato gazpacho recipe. So good in fact that we slurped it up before we had a chance to take a picture.

Blend:

Lots of garlic (7 to 8 cloves)
4 stalks celery (roughly chopped)
1 shallot
8 tomatoes
1 peeled cucumber
3 or 4 peppers (best with a variety of colors)
cilantro
2 tablespoons olive oil
salt and pepper
4 or 5 tomatillos

Chill in the fridge.
