Curried Quinoa, Sweet Potato, and Squash with side salad

This is a perfect simple dish for a weeknight dinner. You can use any blend of potaotes, grains, and vegetables that you have around.

2 sweet potatoes
2 large zuchinni
7 cloves garlic
2 cups quinoa
curry powder
chili powder
olive oil
Salad stuff

Preheat oven to 500 degrees.

Wash sweet potatoes thoroughly and chop into wedges. Toss with olive oil, curry powder, chili powder, and salt. Lay them on a baking pan and place into hot oven.


Meanwhile chop zuchinni into large wedges and peel garlic cloves. Toss them in the oil, curry, chili mixture. Once the sweet potatoes have cooked for 10-15 minutes, add the garlic and squash to the sweet potatoes on the baking pan. Rotate pieces every 10 minutes or so, checking for them to be browned and smell done.

Rinse quiona well. Add 2 cups of quiona, 4 cups of water, a pinch of salt to a saucepan. Bring to a boil and then let simmer covered. Cook for 25 minutes. When done, add tumeric, curry powder, salt, and chili powder to taste. Fluff with a fork.

Serve warm with a side salad.
