Spicy Seaweed Soba Noodle and Greens

I made this for a dinner for two of my dearest friends. It is so tasty and this takes about 30 minutes from entering the kitchen to sitting down at the table cooking at a leisurely pace.

Serves 4 hungry people
16 oz buckwheat soba noodles
1 package tofu or 3 chicken breasts
1 bunch of cilantro
1 bunch of radishes
1 bunch spring onions
1 sheet nori seaweed
1 lb green beans
2 bunches chard or bok choy
1 small white onion
Spicy Chili Paste (Siricha will work here)
Thick Soy Sauce
Cumin
Coriander
Grapeseed oil

Bring a large pot of water to a boil. Add the soba noodles and a pinch of salt and bring the water to a simmer, cooking for about 8 minutes. Rinse in cold water. Do not overcook!

Heat oil in a large wok. Add chicken or tofu and while browning on one side generously drizzle soy sauce and chili paste over the pieces. Flip to the other side and season again. Once cooked through and nicely browned, put aside in a bowl. Scrape out any pieces in the pan, but preserve the oil.

Add the chopped onions to the pan. Saute until translucent with soy sauce, chili paste, coriander, and cumin. Add the green beans and saute, after a few minutes add the chopped greens, cook until green beans are al dente.

In the wok combine the noodles, chicken, and green bean mixture as well as the finely chopped green onions (the white and the green parts). Add more chili paste, coriander, cumin, and soy sauce to taste. Cook just until combined and everything is steaming hot.

Serve hot with finely sliced radishes and chopped cilantro as garnish.
