Simple Red Lentil Tomato Soup

This is the no-fail go-to recipe of one of my best friends. It is especially great when you are cooking for a crowd but on a time and money budget.

1/2 c. earth balance spread
1 large onion chopped
2 cloves garlic minced
2 c. red lentils
4 c. cold water
1 t. salt
1/4 t. black pepper
1 T. dill
2 bay leaves
1 lb. tomato paste

Saute onion and garlic in melted earth balance in a large pot until onions are translucent.
Add rest of ingredients except tomato paste and cook covered until lentil are soft (around an hour plus some). Stir frequently so it doesn’t burn.
After lentils are mostly soft, add tomato paste and mix well. Continue to simmer until lentils are perfect and soup is delicious!

Sprinkle with dill on top and serve with tortilla chips or toasted garlic bread.
