Kale Squash Lentil Curry Soup

This is an immensely tasty and complex soup for how simple it is to prepare. The combination of corn, squash, winter greens, and tomatoes is a perfect autumnal treat. The mix of spicy curry and sweet squash is irresistible. Red lentils are a good choice here because they cook quickly and add a protein and nutrient-rich punch.

Baked Tender Italian White Fish

This recipe turns out incredibly tender, moist, and flavorful fish. You can use any variety of white fish that is freshest. The cooking time is based on fish that is about 1 inch thick. Make sure to not overcook or it will dry out.

Salted Maple Apple Coffee Cake (Dairy Free)

My friend came up with the scrumptious idea of adding maple syrup and salt to the top of this cake. The combination of caramelized maple, apples, and cardamom with some crisp pear slices is one of the most perfect fall comfort foods I could imagine.
