Honey Apple Bread (Gluten Free and Dairy Free)

Our apple tree is overflowing with deliciousness right now and so I have been searching for creative ways to use them all up. This bread is deliciously moist and versatile enough to be served as a sweet but hearty addition to dinner or as a comforting foggy morning breakfast served with homemade applesauce or pumpkin butter.

2 1/2 cups Gluten Free Flour Mix (I use Bob’s Red Mill, as it is cheapest and most delicious)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves

1 cup olive oil
3 eggs
3/4 cup agave nectar
4 large apples, cored and chopped finely
3/4 cup coconut sugar
1 teaspoon vanilla extract

Preheat the oven to 325 degrees.

In a large bowl, stir together the sugar and oil. Beat in the eggs until light, then stir in the agave nectar and vanilla.

Combine the flour, baking powder, baking soda, salt, cinnamon and allspice; stir into the batter just until moistened. Fold in the apple pieces.

Pour into two greased loaf pans. Bake for 40-60 minutes, or until a toothpick inserted comes out clean.
