Cardamon Apple Crumble (Wheat and Dairy Free)

I’m continuing in my quest to use all the apples from our backyard tree. The cardamon in this crumble is a perfect antidote to the first nips of fall. This recipe has very little sugar and with the barley flakes, is actually fairly healthy.


6 apples
Pinch of salt
1/2 cup coconut sugar
1/2 cup gluten-free all purpose flour
1/2 cup barley flakes
1/2 cup pecans
1/2 cup coconut milk
1/2 cup coconut butter

De-core and slice apples, place in bowl and squeeze lemon on top to prevent browning.

In a separate bowl mix flour, sugar, barley flakes, and cardamon. Cut in cold coconut butter pieces.

Grease glass baking pan. Add apples and then pour over crumble mixture. If there is not enough to cover all the apples, make more. Pour coconut milk over the whole mixture.

Cook 40-60 minutes at 350 degrees until mixture is browned and bubbling.

      Thanks for the correction! Barley is wheat free, which is what I am usually worried about, but not gluten-free.
