Salted Maple Apple Coffee Cake (Dairy Free)

My friend came up with the scrumptious idea of adding maple syrup and salt to the top of this cake. The combination of caramelized maple, apples, and cardamom with some crisp pear slices is one of the most perfect fall comfort foods I could imagine.

4 apples
1 pear
3 cups unbleached all purpose flour
1 3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons cardamom
1 teaspoon nutmeg
1 teaspoon cinnamon
¼ cup orange juice
zest or 1 orange
4 large eggs
1 cup vegetable oil.

Preheat oven to 375 degrees. grease and flour a 10 pan.

combine peeled cored and coarsely chopped apples and/or pears. In a separate bowl combine the flour, sugar, baking powder, salt, cardamom, nutmeg and spices.

In a separate bowl beat eggs and add oil. Combine with orange zest and juice.

Bake for 60 minutes or until a toothpick comes out clean. Take out and while still hot top with maple syrup and coarsely grated Himalayan salt. Decorate with crisp pear slices.
