Super Simple Baked Okra

I rarely use okra, but this came out delicious. It is so simple and is a great way to shake up the old regular veggie side dishes.

2 lbs okra
Olive Oil

Cut off tops and chop into 3 inch pieces. Cover in olive oil and salt and then lay out on baking pan. Cook until tender and crispy, about 15 minutes.

    I would have never imagined. My okra is typically cooked on the stove with tomatoes and or corn. This is interesting. This is a shake up indeed. I like to shake my recipes up.
