Spicy Three Bean Salad (GF and DF)

Mark Bittman’s 101 Simple Summer Salads is one of my favorite resources for simple flavorful sides. While its not quite summer anymore, all the ingredients for this side are in season. I love how spicy this is, it helps counteract the potential blandness of beans.

Equal amounts of:
Black Beans
Kidney Beans
Garbanzo beans

2 jalapeno peppers, chopped finely without the seeds
3 bell peppers (different colors will add a nice touch)
3 ears of corn, with the kernels removed raw
1 bunch of fresh oregano leaves, finely chopped
Juice of 2 lemons
Olive Oil

Mix everything together, season to taste and enjoy. A delicious addition on lunch salads for work, will stay fresh for about 4 days.
