Warm Lemon Pasta Arugula Salad- GF and DF

This recipe is one of my favorite fall backs from Mark Bittman’s 101 simple summer salads. Make sure to put on plenty of lemon and pepper. I can’t get enough of this recipe!

1 package GF pasta
Arugula
Crushed walnuts or Parmesan cheese
Lemon
Olive Oil
Salt
Freshly ground black pepper

Cook pasta according to instructions, do not overcook GF pasta!

Prepare Arugula in a bowl when pasta is done and rinsed with cold water spoon pasta onto salad. Toss with olive oil, black pepper, lemon, and salt. You want more arugula than pasta. Sprinkle with walnuts or Parmesan.
