Massaged Raw Kale Avocado Salad

This recipe is an adaptation of a massaged kale salad I have been making and sharing for years. This is so delicious, you will even forget its so healthy (almost…) For those of you just interested in the recipe, feel free to skip the next couple of paragraphs. For anyone who has struggled with systemic candida, this might be interesting to you! At least for the next couple of weeks, recipes on the blogged will be geared towards nourishing and delicious candida friendly meals.

For years I have struggled with Candida. The more I read the more I think that a range of problems from digestion, fatigue, insomnia, gluten sensitivity, and fungus can be explained by systemic yeast. I am finally biting the bullet and going through the Candida Cleanse and diet. You can read more about this here http://www.candidadiet.com. The first stage is very strict, but I was happy to see that both kale and avocado are permitted. An important part of the diet is eating fresh foods, so make this soon after you bring kale home from the store and eat it up quickly.

2 lemons
3 avocados
1 head fresh kale
(if you are not on a candida diet, adding sunflower seeds, honey, and radishes is a welcome addition)
olive oil
Sea salt
Black Pepper

De-stem the kale and roughly chop. Scoop out avocado flesh and add. Squeeze lemons onto the salad. Add a dash of olive oil and salt and pepper.

Now comes the fun part. Roll up your sleeves and dive in, massaging the kale for at least 5-10 minutes. This breaks down the roughness and makes this delicious. Add more lemon or other optional toppings to taste.

    I frequently massage my kale with garlic and then bake kale chips. Now, I can add lemon to my massage therapy sessions. Of course avocado makes every salad better!
