Pear, Goat Cheese, and Candied Walnut Spinach Salad

I have made this salad three times for myself, friends, and family in the past week. It is really good and very easy to prepare. I adapted this salad from a recipe Whole Foods gave out in their weekly flyer.

4 newly ripe Comice pears, chopped.
1/4 cup extra-virgin olive oil
1/4 cup white wine vinegar
1 tablespoon German mustard
2 tablespoons honey, agave nectar, or maple syrup
1 pound spinach, torn into bite-size pieces
1/2 red onion, thinly sliced
1 cup walnuts
1 tablespoon coconut oil and coconut sugar
5 ounces goat cheese, crumbled

Toast walnuts with coconut oil, coconut sugar, and salt until browned but not burnt. This happens quickly so keep an eye out!

In a bowl mix oil, vinegar, mustard, honey, and salt and pepper to make your dressing.

Put spinach, onion, walnuts, goat cheese, sliced pears and dressing into a large bowl and toss gently to coat. Serve immediately.
