Delicious Chewy Granola Bars (gluten free and vegan)

I have made many a granola bar in my life. Some of them have been too crumbly, some of them have tasted really healthy but not been that delicious, but none of them have been quite as delicious and held together quite as well as these ones. I am pretty delighted to have finally stumbled upon the right combination.

I was on a quest to make the perfect granola bar, because these are a gift for one of my favorite people in the world and I wanted her to really really like them. They are en route, so keep your fingers crossed.

I found some major inspiration and guidance for these bars from the amazing blog theKitchn and then muddled around to make the rest. I made two batches of these, one with dark chocolate on top and one without. Even though the dark chocolate one would seem like the natural winner given how chocolate obsessed I am, I actually couldn’t decide they are both equally charming.

Vegan Sweet Wine Biscuits with Sesame

I am definitely not a cookie snob. I love a good old fashioned simple chocolate chip cookie. But sometimes times call for a more adult cookie. This cookie fits that bill. These are delicious and not too sweet, with an intriguing purple hue, subtle wine flavor and irresistible sesame crunch. I served these at a professional gathering alongside clementines, warm cider, goat cheese, and crackers and they added a unique elegance to the whole event.

Samoas (Vegan and Gluten-Free)

Samoas have always been and will always be my favorite girl scout cookie. Who can resist their chewy, crunchy texture and chocolatey coconut goodness? Thats why I was DELIGHTED when I came across a recipe for them in the Vegan Cookies Invade your Cookie Jar book (a must for all vegan or dairy free cookers). I adjusted their excellent recipe to make it gluten free as well as tweaked a few things and toned down the amount of sugar. With dark chocolate, shredded coconut, and coconut oil these cookies are surprisingly healthy (as far as cookies go) but they certainly don’t taste like it. I left a plate of these out when we had friends over and they were all gone in about 5 minutes flat. In my opinion they are best cold from the fridge. Enjoy!

Truly Healthy and Delicious Pumpkin Muffins- Grain free, dairy free, and (almost) sugar free

After the gluten dairy muffins of last week, I decided to make some that I could truly eat without guilt. These muffins were inspired by a recipe on http://www.elanaspantry.com/, a health-conscious food blog I love. They are incredibly protein rich, barely sweetened (and only with stevia and coconut sugar), have no grains at all (just coconut flour), and amazingly end up being irresistible. I was a little surprised myself, but everyone in my family gobbled this batch up right away. This is a deeply nourishing recipe and they are best eaten the day of. The following recipe is only for 6 large muffins. This recipe makes a spicy muffin, cinnamon and ginger are both healing spices and will delight your taste buds in these indulgent muffins.

Fluffy Pumpkin muffins

These muffins are not GF or DF, but they are delicious. I had a friendsgiving celebration at my house and I wanted a crowd-pleasing appetizer for a room full of allergy-free people and oh my, did these turn out incredible.  I combined recipes for biscuits and muffins and the result is a super fluffy, not too sweet, and ultra moist pumpkin treat.

I also applied two recent tricks I learned about muffin baking to good results in this recipe. One, try to minimize the time that elapses between mixing the wet and dry ingredients and placing the muffins in the oven. Once the baking powder/soda gets wet it slowly begins to lose its rising ability. So pre-grease your muffin pans and get those muffins in the oven ASAP for maximum fluffiness. Second, heavily greasing the muffin tins produces a muffin that is ever so slightly crispy on the sides aka very delicious. Enjoy!

Salted Maple Apple Coffee Cake (Dairy Free)

My friend came up with the scrumptious idea of adding maple syrup and salt to the top of this cake. The combination of caramelized maple, apples, and cardamom with some crisp pear slices is one of the most perfect fall comfort foods I could imagine.

Cardamon Apple Crumble (Wheat and Dairy Free)

I’m continuing in my quest to use all the apples from our backyard tree. The cardamon in this crumble is a perfect antidote to the first nips of fall. This recipe has very little sugar and with the barley flakes, is actually fairly healthy.
